Hellooo guys!! I hope everyone had an amazing Thanksgiving and had fun celebrating and eating with friends and family! Food is a big part of life right now between all the holiday parties, get togethers and visiting relatives so I wanted to share this recipe that my family really loves to eat around this time of year! My brother even loves it, and he’s the guy who loves microwave burritos and Taco Bell (no hate, just sayin lol)!
I like to only make this on special occasions because it does have some butter in it (butter=dairy=my skin breaks out) but it’s so good that it’s worth it! I make it every Thanksgiving and again on Christmas (unless we have chili, which is awesome in it’s own not so Christmas-y way). The pictures I have are from me doubling the recipe on Thanksgiving, but if you’re not feeding a crowd then following the recipe as is will be just fine!
This recipe is great because it’s literally SO easy and you can kind of mold it to your taste preference by adding more or less of the lemon juice, salt, pepper, or mint. It’s fun trying to get it just right!
Peas and Onions
2 tablespoons butter
2 cups sliced green onions (white and green parts)
4 cups (two 12 oz bags) frozen peas
2 tablespoons water
2 tablespoons chopped mint
2 tablespoons lemon juice (or juice of 1 lemon)
1/2 teaspoon salt + more to taste
pepper to taste
In a large pot, melt butter over low heat.
Add onions and 1/2 teaspoon salt. Cook covered, stirring occasionally until tender – about 5 minutes.
Stir in frozen peas and 2 tablespoons water. Cover and cook until peas are warmed through but not hot.
Remove from heat and stir in mint, lemon juice, salt and pepper to taste!
Serve it warm or let it come to room temperature before serving, either way it’s awesome!
