Black Bean Avocado Toast

Okay, so I know I am totally late to jump onto the whole avocado toast craze, but I just recently tried it for the first time and holy cow was it good!!! So today’s post is going to be dedicated to the simple but delicious avocado toast concoction that I created, and I’m really happy with how it came out! It’s light and healthy but you feel like you’re eating something really special!

My recipe is 100% vegan but you could totally add a sprinkle of feta or parmesan cheese if you wanted, or even an egg on top! Anything goes really, and the ratio of ingredients is totally up to you! I tend to not have specific ratios when I cook and rely more on taste each time. You never know if you’re going to have a super oniony onion or if you’re wanting something a little less salty one day. That’s why I like to go by taste each time (usually having a heavy hand with the red pepper flakes, garlic powder and onion – it keeps people a nice distance away for a while, if you know what I mean LOL) but I always use all the ingredients below! It may seem like a lot of different spices but what can I say, I love a ton of flavor! I hope you try this out and find your own favorite combination of flavors!!

Dinner with a view, don’t mind if I do(:

Makes 1 serving (2 slices)

2 slices bread, toasted (I used Ezekiel Bread)

For the guacamole:

1/2 an avocado

Chopped onion

Salt

Black pepper

Turmeric

Garlic powder

Red pepper flakes

Oregano flakes

Chili powder

Lemon juice

For the black bean topping:

Canned black beans (with some of the liquid from the can remaining)

Salt

Red pepper flakes

Garlic powder

Drizzle of olive oil

Mix whatever ingredients you’re using for your guacamole together in a bowl, cover and refrigerate for a few hours.

Mix your black bean ingredients together in a separate bowl, cover and refrigerate for a few hours.

Once you’re ready to assemble everything together, toast your bread – let it get nice and crisp! Then layer on your guac and black beans!

Add whatever toppings you want (I leave mine as is). Eat right away so your toast doesn’t get soggy!
