Leftover Vegan Chickpea Soup Shakshuka

Welcome back to Brennan’s Grin! I’ve been having so much fun cooking tons of fun recipes lately which also means lots of leftovers lately, and that’s the best! Anyone else love leftovers?? You can make them into so many different things and they always taste better the second day because the flavors have had a chance to really mix and mingle!

For today’s recipe I’m making Shakshuka from my Vegan Chickpea Soup leftovers! (You could use any leftovers you have, really. Any kind of soup, stew, tomato based sauce, roasted veg or any kind of baked dish!) It’s so good that you’ll forget about it being leftovers and try to go back for seconds!

To start your Shakshuka spoon whatever leftovers you’re using into an oven-safe skillet or pan. Using your spoon, make small wells/dips so your eggs will have nice cozy places to sit.


Next, crack your eggs and place them into their wells!


Now it’s time to season your cute little ‘shuke! (Cute little shakshuka just doesn’t have the same ring to it) I sprinkled a little salt, pepper, garlic powder and red pepper flakes on top and then drizzled a small amount of olive oil over everything!


Once you have it seasoned to your liking, pop it (uncovered) into an oven that’s been pre-heated to 375 degrees! Keep an eye on it so you know when it’s done! Everyone likes their eggs cooked differently so be sure to pull yours out of the oven once it’s cooked to your liking! I kept my egg a little runny but totally leave yours in the oven longer if you want it cooked through.


Serve it hot and by itself or with a nice piece of toasty bread on the side!


So there you have it, guys! No boring leftovers around here! Making something new and delicious is so easy and totally worth it and turning leftovers into shakshuka is one of the best things ever!
