I don’t know what it is about potatoes but I just can’t seem to get enough of them! Roasted and fried! Mashed, smashed and hashed! Purple, red and gold! Fingerling and sweet potatoes! I just love ’em!
There is such an element of comfort and old-timeyness about them that I really like! People all the way back to the beginning of time ate potatoes, our grandparents ate potatoes and our great great great great grandchildren will be eating potatoes! So really, when you’re eating those french fries you’re actually connecting with your ancestors via the potato- which is awesome! Go french fries!!
So now that we have our excuse to love and eat potatoes (in any way, shape or form) let’s dive right into this recipe, shall we? It really focuses on the ~roasting~ and smashing of these purple potatoes but gets a delicious punch of flavor from the onions and garlic! And it’s absolutely gorgeous to look at which is always nice!
Recipe makes 2-3 servings
6 purple potatoes
1/2 yellow onion
1/2 red onion
3 garlic cloves
3-4 tablespoons olive oil
salt and pepper to taste
Preheat your oven to 350 degrees. Wash and set your potatoes onto a foil-lined baking sheet.
Slice the onions and garlic into pretty thick slices and sprinkle them around the potatoes.
Drizzle the olive oil over everything and sprinkle salt and pepper. Stir to coat everything evenly. Pop them into the oven and roast them for 45-50 minutes.
Pull them out and using the back of a wooden spoon (or any large, shallow spoon) smash the potatoes down until they are pretty flat. Then put them back into the oven for another 20 minutes.
Pull them out and sprinkle with more salt and pepper to taste. Serve with the roasted onions and garlic fresh out of the oven as a side dish or as the focal point of your meal!
