Vegan Banana Bread

Hey guys!

So question: If you could only eat one type of bread for the rest of your life what would it be? My answer is so easy! ~BANANA BREAD!~ In fact, I love banana bread so much that it’s what I make for my birthday dessert instead of a regular cake! I know, I know! But it’s my favorite, so don’t judge! (But I am sorry to my family who have to eat banana bread for birthday cake lol)

I’m not sure when the transition occurred but I’ve turned into one of those devoted banana people. An apple a day? I think not! But a banana a day I am totally on board with! Especially over ripe bananas-which are peeerrrrect for making banana bread!!

So mosey on up to banana town, people, and let’s get started on this Vegan Banana Bread recipe!!

What you’ll need:

-3 very ripe bananas

-1/2 cup coconut oil, melted

-2 flax eggs (2 tablespoons flax seeds, freshly ground. Mix the ground flax seeds with 5 tablespoons of water. Let it sit for 5 minutes)

-1 tablespoon vanilla extract

-1 teaspoon baking soda

-1/2 teaspoon salt

-1/2 cup sugar

-2 cups whole wheat flour

-6 tablespoons almond milk

 

Begin by greasing a loaf pan (I used coconut oil) and preheating your oven to 350 degrees F. Next, make your flax eggs and let them sit for 5 minutes. While your flax eggs are sitting, mash your bananas and mix in the melted coconut oil and vanilla extract. When the flax eggs are ready, pour them in!

Now add in the baking soda, salt and sugar to the wet ingredients and mix them all together. Slowly add in the flour and almond milk, alternately, until everything is mixed together completely. Pour the batter into your loaf pan and bake it for 45 minutes, then let it cool for a few minutes before slicing.

You can serve the bread by itself or with ice cream for a dessert! You can set it out as a snack with tea! You can eat it for breakfast with a smear of almond butter! The possibilities are endless and it’s a super healthy treat for any time of the day! I really hope you guys try this recipe and if you do let me know in the comment section!! I would love to know!
