Roasted Carrots


Happy Holidays, everyone!!

It’s that time of the year, again! Thanksgiving, Christmas, New Year’s Eve! Holiday parties, family get togethers, dinners, brunches, lunches and friendsgivings! There are so many things going on these days that require a lot of cooking which can great! It can be a nice way to spend time with loved ones and make memories or bring back old memories!

But sometimes you might want to make something that’s quick and easy but still delicious and healthy. That’s where these Roasted Carrots come in! There is little to zero work that goes into making them, which is super nice this time of the year if you’re crunched on prep work time!


What you’ll need:

-1 pound organic carrots

-2 tablespoons olive oil

-1/2 teaspoon salt

-1/2 teaspoon garlic powder

-1 teaspoon dried oregano

-1/4 teaspoon cracked black pepper


Preheat your oven to 375 degrees and line a baking tray with aluminum foil. Rinse your carrots and dry them well. Trim their tops if you like.


Drizzle the olive oil over the carrots and roll them around to coat them evenly. Then sprinkle on the spices and then roll them around again so that the spices are evenly distributed.


Depending on the thickness of your carrots, cooking time can be anywhere between 30 minutes to an hour. The thinner the carrot, the shorter the cooking time. I had a variety of sizes so I just kept checking them and pulled the thinner ones out after 35 minutes but the thicker ones stayed in for the whole hour.


Serve them as a side or even the main attraction if that’s your thing! Everyone loves these because they’re so simple yet so flavorful and warming! It really feels like the holidays when you’re eating these!
