Anyways, I’m back- and I come bearing gifts! This amazing and simple (*~and healthy~*) jam recipe is one I’ve been making so much recently! Thank God it’s made with some simple ingredients (like frozen berries) and is so fast to whip up (I’m talking 4 minutes in the microwave) because editing those YouTube videos takes longer than one might think! So having something that’s healthy and so easy to make around the house is a win-win in my book!
What you’ll need:
-2 cups frozen mixed berries (organic is preferred)
-1 tablespoon Grade A maple syrup or more if berries are on the tart side
-2 tablespoons whole chia seeds, freshly ground
-Microwave the frozen berries for 4 minutes in a microwave-safe bowl (depending on your microwave the cooking time may vary. Mine takes 4 minutes to get hot and bubbly but it may be faster for others).
-Once the berries are out of the microwave, mash them with a fork to break them down into a smoother consistency. Add in the maple syrup (or honey if that’s what you have) and stir to combine.
Next, measure out the two tablespoons of chia seeds. Add them into a coffee grinder and grind them into a powder. Pour them into the jam and stir well to combine.
If you want to go ahead and eat some of the jam while it’s fresh and warm then go right ahead! But my suggestion is letting it chill in the refrigerator overnight. By morning it’s thickened and the flavors have had a chance to combine and it’s absolutely delicious! You can put it on toast, in yogurt, in a sandwich, over vegan ice cream, or any way you see fit! Sometimes I eat it all by itself like pudding because it’s that good!!
