Chocolate Chip Banana Bread Muffins! (Dairy-Free)

Hey guys!!

So today’s recipe is a spin-off of my OG Vegan Banana Bread recipe! I pretty much use the same base from that recipe for these muffins, the only difference is the eggs and I used coconut palm sugar instead of white sugar! Either way though, you can’t go wrong with adding some chocolate into an already AMAZING recipe, amiright??

These are healthy (in moderation of course) and so delicious!!! Adding some nuts or nut butter into the batter would be so good, too!! You can be so creative and add whatever mix-ins you like!!

What you’ll need:

-3 very ripe bananas

-1/2 cup coconut oil, melted

-2 pasture raised eggs

-1 tablespoon vanilla extract

-1 teaspoon baking soda

-1/2 teaspoon salt

-1/2 cup sugar

-2 cups whole wheat flour

-6 tablespoons almond milk

-1 cup dairy-free chocolate chips, plus more to top your muffins

 

Begin by preheating your oven to 350 degrees F and lining a muffin tin with cups. Next mash your bananas and mix in the melted coconut oil, vanilla extract and eggs. Mix together!

Now add in the baking soda, salt and sugar to the wet ingredients and mix them all together. Slowly add in the flour and almond milk, alternately, until everything is mixed together completely.

Spoon the batter into the muffin cups (makes about 16 muffins) and top with more chocolate chips! Pop them into the oven and bake for about 30-35 minutes, or until a toothpick comes out clean!

My biggest recommendation for these muffins is to let them chill in the fridge before enjoying! They really work some magic in the cold, somehow it makes them more dense and the sweetness shines through more! So refrigerate them first, and then they are SO good and ready to be devoured!! Same goes for my Vegan Banana Bread recipe, so it makes sense that these are better after being refrigerated, too! But these healthy treats are so good, I even had one for breakfast this morning!(:
